In my opinion, oatmeal cookies are the perfect cookies. They taste amazing and are great for adding something a little more healthy, and a little less chocolatey to our desserts. I decided to elevate the classic oatmeal cookie by creating soft and scrumptious Cranberry Oatmeal Cookies. This fruity kick goes perfect with a cup of coffee, or a glass of milk for the little ones. Really they go with any drink, but cranberry juice may be a bit of an overkill. Regardless of what you decide to serve your cookies with, you will definitely be reaching for more and more.
Another reason I love to make oatmeal cookies is because they add a fun, delicious texture to a standard cookie. This classic treat is easy to make and has a yummy, nostalgic taste, too!
Ingredients for Soft, Scrumptious Cranberry Oatmeal Cookies:
I love to bake these cookies because they are straightforward and easy to make. In fact, you probably have a lot of the ingredients in your kitchen already. Here is everything you need for the perfect Cranberry Oatmeal Cookies.
- Softened Unsalted Butter
- All-purpose Flour
- Baking Soda
- Kosher Salt
- White Sugar
- Light Brown Sugar
- Egg
- Vanilla Extract
- Rolled Oats
- And, of course, Dried Cranberries (can be sweetened or unsweetened depending on preferences)

So, they are perfect to bring to a party or get-together. Once we are done quarantining and can hang out in large groups again, I will be bringing cookies everywhere I go!
Cranberry Oatmeal Cookie Recipe Steps:
Now that you have your ingredients, you are ready to begin! To start, making these amazing soft Cranberry Oatmeal Cookies, you will need to cream the butter and sugars together. Make sure the butter is softened prior to creaming the butter and sugars.
After that, in a mixer bowl with the paddle attachment, add the butter, white sugar, brown sugar, and cream for two minutes. Mix in the egg and vanilla extract until they are fully mixed together.
Next, in a separate bowl, mix flour, baking soda, and salt together. While the mix is on low, slowly add your dry ingredients. Once this is well-combined, add the oats and cranberry and mix this for another 20 seconds. Make sure to scrape the sides and fold them into the dough.
Afterwards, roll the cookie dough into a large bowl and cover it with plastic wrap. Place it in the fridge for 20 minutes. By placing the cookie dough in the fridge, you are allowing the cookies to stay thicker while baking!
Cranberry Oatmeal Cookie Recipe Tips & Tricks:
While your dough is in the fridge, preheat the oven to 350 degrees Fahrenheit and prepare a baking sheet with parchment paper. Scoop the cookie dough, creating cookie balls the size of golf balls. Then, place the cookies balls two inches apart on the baking pan. Flatten the balls with a cup, but only halfway. Do not flatten the cookie dough entirely! Bake for 12-15 minutes.
Rolled in Dough Tip: If you are not a huge fan of cranberries, that is totally ok! You can still make this amazing treat by substituting the cranberries for raisins, chocolate chips, M&Ms, chopped dates, or even chopped pecans or walnuts. Feel free to get creative and really make these cookies your own treat! I liked the cranberries for adding a fruity, atypical twist.
