Soft, Scrumptious Cranberry Oatmeal Cookies

Here they are! The perfect Cranberry Oatmeal Cookies! The perfect treat for any sweet occasion. 


Ingredients

  • 1/2 cup of Unsalted Softened Butter
  • 1/2 cup of Light Brown Sugar
  • 1/4 cup of White Sugar
  • 1 Egg
  • 1 tsp of Vanilla Extract
  • 1 cup of All-Purpose Flour
  • 1/2 tsp of Baking Soda
  • 1/4 tsp of Kosher Salt
  • 1 1/2 cup of Rolled Oats
  • 1 cup of Dried Cranberries (can be sweetened or unsweetened depending on preference).

Instructions

1. In a mixer bowl, with the paddle attachment, add the butter, white sugar, and brown sugar and cream. Mix for two minutes.

2. Mix in the egg and vanilla extract until fully mixed together.

 3. In a separate bowl, mix the flour, baking soda, and salt together. While the mix is on low, slowly add your dry ingredients. Once well-combined, add the oats and cranberry and mix for another 20 seconds. Make sure to scrape the sides and fold them into the dough.

4. Roll the cookie dough into a large bowl cover with plastic wrap. Place in the fridge for 20 minutes.

5. Preheat the oven to 350 degrees Fahrenheit and prepare a baking sheet with parchment paper.

6. Scoop the cookie dough, creating cookie balls the size of golf balls. Place the cookies balls two inches apart on the baking pan. Flatten the balls with a cup, but only halfway. Do not flatten the cookie dough. Bake for 12-15 minutes.
