The Method Behind My Madness: Why did I Decide to Make Banana Chocolate Chip Bars?

We all have those days where we buy a big bunch of bananas in the hopes that either we will eat one a day, or our children will start to eat them. Who are we kidding?! At my house, it stays in the exact same spot where we placed it after arriving home from the grocery, and my kids would much rather eat candy than bananas. Once in a blue moon, someone might just be brave enough to do the unthinkable: eat a plain banana on its own. Most of the time, at least in my experience, it ends up in a smoothie or becomes banana bread. I grew tired of these two recipes (and started wondering why everyone got so into banana bread baking during quarantine) and my bananas going bad. So, I decided to create something fresh and new. How to Make the Perfect Banana Chocolate Chip Bars:

To make these amazing Banana Chocolate Chip Bars, mash the bananas in the bowl, add the sugar, oil, milk, and eggs. Then, whisk these ingredients to combine them. Next, add the flour, baking soda, and salt to the bowl. Whisk the ingredients to combine them. Lastly, fold in your chocolate chips, leave about a 1/4 of a cup in the side. If you choose to add any nuts, like pecans, add them now by folding them into the batter.

Now, you are ready to start baking your Banana Chocolate Chip Bars! You are just one step closer to that melt-in-your-mouth goodness. Spread the batter onto a 16 x 12 baking pan and sprinkle the rest of the chocolate chips on top. Bake for 20 minutes or until golden brown. To check, insert a toothpick and see if it comes out clean. Description

These Banana Chocolate Chips Bars are a perfect treat or even an on-the-go breakfast. Put your old bananas to good use with this delicious bar.


Ingredients

Scale
  • 45 Ripe Bananas
  • 3/4 cup of Light Brown Sugar
  • 1/4 cup of Vegetable Oil
  • 1/4 cup of Milk
  • 2 Large Eggs
  • 1 3/4 cup of All-purpose Flour
  • 1 tsp of Baking Soda
  • 1/2 tsp of Salt
  • 1 cup of Chocolate Chips
  • 1 cup of Walnuts (optional)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Spray a 16×12 baking pan with baking spray 
  3. In a large bowl, add the bananas and mash them until they become a smoothie texture. Larger lumps are ok, too. 
  4. Add the sugar, oil, milk, and eggs and whisk until well combined. 
  5. Add the flour, baking soda, and salt. Mix until well combined. 
  6. Fold in the chocolate chip, leave 1/4 of a cup on the side. 
  7. Spread the batter onto the baking pan and top with the rest of the chocolate chips. 
  8. Bake for 20-25 minutes, until golden on the top and the toothpick comes out clean. 
  9. Let cool before cutting into bars. 
  10. Serve and enjoy!

Notes

Banana chocolate chip bars that are soft melt in your mouth goodness. Serve them with ice cream or on their own, they are sure to be a crowd pleaser!
