The cabin-fever feeling we are experiencing during quarantine is hitting us all a little harder lately. With no end in sight, my kids have been home for over two weeks, and I have been on the hunt for a creative and fun way to keep them entertained. I found the perfect solution: my St. Patrick’s Whipped Cream Dessert. This is the perfect dish to make with your kids. You can let them decorate on their own (obviously, my kids opted for sprinkles) and have fun while they eat delicious whipped cream. With St. Patrick’s Day right around the corner, this is the perfect celebratory dish that is sure to lift their spirits.
I created the St. Patrick’s Whipped Cream Dessert very last minute with the ingredients I had on hand, especially since the supermarkets are practically empty and an online order would not arrive until Thursday. So, for a quick St. Patrick’s inspired dessert, I made pistachio and chocolate whip cream with espresso dipped tea biscuits, topped with coconut crisps and crushed pistachios. I definitely need to come up with a more clever name for this sweet St. Patrick’s Day Dessert. These days, I have a lot of time to brainstorm! For now, the St. Patrick’s Day Whipped Cream Dessert will have to suffice.
Recipe Ingredients
I love that this recipe is so quick and easy to make, even with minimal ingredients. Here is everything you need to make this delicious dish:
- Heavy Cream (you can opt for a non-dairy heavy cream, if you want)
- Pistachio Pudding Mix
- White Chocolate Chips
- Crushed Pistachios
- Coconut Chips
- Tea Biscuits
- Espresso
With just seven ingredients, you will have a scrumptious treat in no time! It is so easy, and better yet, you will not need to turn on your oven.
St. Patrick’s Day Whipped Cream Dessert Steps:
To start making this dish, pour half of the heavy cream and two tbs of pistachio pudding into your mixer. Mix on medium-high until there are stiff peaks and move to the side. Now, it is time for arguably everyone’s favorite step: the chocolate! Melt the white chocolate chips over a double boiler.
Then, pour the rest of the heavy cream into the mixer and add the melted white chocolate to the mixer. Mix on medium-high until there are stiff peaks.
Rolled in Dough Quick Tip: If the heavy cream is chilled, it will create very small melted chocolate chips, which my family and kids absolutely love!
Next, place the pistachio whipped cream in a pastry bag and the white chocolate whipped cream mix into a separate pastry bag. Then, fill half of your cup, glass, bowl, or container (your choice, really) with whichever whipped cream you choose. After this, place your tea biscuits in the espresso and layer them one by one over the whipped cream. Then, put the other type of whipped cream over the tea biscuits. This way, you are getting both flavors in one cup!
Place the dishes in the refrigerator until you are ready to serve and eat them. Once you take the Whipped Cream Desserts out, feel free to add any additional toppings, like chocolate chips, coconut crisps, or crushed pistachios. You get extra brownie points if you do a healthy topping, like fresh berries.
Rolled in Dough – Bake with Kids:
This is the perfect dessert to have your kids do with you. The fun green color will help them get in the St. Patrick’s Day spirit, especially since they cannot have a classroom St. Patrick’s party this year. Here is everything you can do to get in the spirit with them, depending on their age and maturity level:
- Let your kids put the whipped cream into the pastry bags, as long as you trust them not to make a mess. This will help them feel like a real professional!
- Your kids can layer their own whipped cream dish. Maybe they do not want to stack the tea biscuits, or maybe they want to add even more than two layers. Let them get creative, this is a great outlet for them to do so!
- Kids can dip the tea biscuits into the Espresso.
- Lastly, let your kids pick out their own toppings. Who knows, they may even surprise you and reach for the berries over the extra chocolate chips (but probably not, though)!

Instructions
- Pour half the heavy cream (8 oz) and 2 tbs of pistachio pudding into your mixer and mix on medium-high until there are stiff peaks. Set aside.
- Melt the white chocolate chip over a double boiler.
- Pour the rest of the heavy cream into the mixer and add the melted white chocolate. Mix on medium-high until stiff peaks.
- Place your pistachio whip cream in a pastry bag. In another bag, place your white chocolate whip cream.
- Place all your cups/containers in line and fill half of the container with either cream.
- Dip your tea biscuits in the espresso one by one and place over the whipped cream. Top off with the other type of whip cream.
- Place the container in the fridge. When you are ready to serve, top them off with either coconut crips, crushed pistachios, or even berries!
