No-Bake, No Fuss: The Perfect Peanut Butter Date Bites

Desserts that are both tasty and healthy are always a win in my book. These No-Bake Peanut Butter Date Bites are a perfect mini snack for the little ones and for adults. They are also dairy-free, so even your lactose intolerant guests can enjoy this sweet treat, too. Loved by everyone, I personally love to keep these treats in the fridge for a week and to grab one whenever I get a sweet craving and want a little bite to eat.

These No-Bake Peanut Butter Date Bites are easy to make and the only requires a food processor. Fewer dishes for me to wash and a delicious taste? Say less. You do not even need to turn on your oven to make these treats. Making a crunchy, gooey snack has never been so easy.

Another reason I love making this dish is because these bites are so quick to make. With the entire process taking about half an hour, you can make them while you cook your dinner, and even have the kids join in on making their own peanut butter bites.

As a photographer, I love this dish from an aesthetic standpoint. These bite size bits took (almost) too good to eat! With a little extra chocolate drizzled on top of them, you are definitely going to have all your Instagram followers drooling over the No-Bake Peanut Butter Date Bites.

Ingredients for the Perfect No-Bake Peanut Butter Date Bites:

  • Pitted Dates
  • Natural, no sugar added Peanut Butter
  • Cashews or Peanuts
  • Cocoa Powder
  • Salt
  • Almond Milk
  • Dark Chocolate
  • Coconut Oil

For this delicious treat, you will need about two cups of dates. As a tip, I highly recommend buying pre-pitted dates so you can have them on hand to make these amazing bites. However, if you can only find dates with the pits, just squeeze them on one end and the pit should come out the other end. Another way to remove the pit is to cut along the date and take out the pits.

How to Make the Perfect No-Bake Peanut Butter Date Bites:

Getting Ready: Preparing Your Mixture:

First, in the food processor, add the dates, peanut butter, cashews (or peanuts), salt, almond milk, and cocoa powder and mix until combined into a thick paste-like texture. Personally, I like to still see a few chopped nuts to add that crunchy, nutty texture to the paste. I love that extra crunchy goodness!

Once the mixture is ready, prepare a small bowl with water. To begin creating these bite balls, grab a cookie scooper, and scoop a ball onto the palm of your hand. Wet your other hand with the water in the bowl and begin to form it into a ball. This will create smooth, mini bites. Once you do all of this, place them in the fridge for 15 to 20 minutes.

In the meantime, you can start to prepare your chocolate drizzle! To do so, use a double boiler to melt the dark chocolate chunks with the coconut oil. In the case that the chocolate is too thick, add half a teaspoon of coconut oil at a time to the mix until you reach your desired consistency. On the other hand, if the mixture is too watery, you can add more of the dark chocolate. Drizzle the chocolate above the bites, either one by one or over one row at a time. This is a chance for you to get creative in deciding how you want the chocolate to look, so feel free to have some fun!

Rolled in Dough Quick Tip: For optimum chocolate use, you can place the chocolate balls on a plate you can drizzle the chocolate on and place them back in the fridge. Once the chocolate has hardened (which should take about ten minutes), transfer the bites onto a container, a pretty plate, or a serving dish. This way, the bites are ready for serving and you and your guests can grab a quick bite without creating a chocolate mess. Although, a chocolate mess does sound delicious.

This is a fun dessert to let the kids get creative with. Also, it is great to show them that a healthy treat can be delicious and fun, as well. Here is what the kids can do to elevate this baking day:

  • Allow them to create their ball bites.
  • Allow them to drizzle the chocolate (they will probably be covered with chocolate, but who cares?! They will not be upset about this — that’s for sure!)
  • Finally, let them get creative. Have them decide on the items they would like to add the bites, such as peanuts versus cashews and peanut butter versus almond butter.

Description

These No-Bake Peanut Butter Date Balls are the perfect quick healthy bite that will satisfy your sweet tooth. They are vegan, dairy free and you don’t even need to turn on the oven. Talk about a win-win!


Ingredients

  • 2 cups of Pitted Dates
  • 1/2 cup of Unsalted Cashews
  • 2 tbsp of Cocoa Powder 
  • 1/2 tsp of Salt
  • 2 tbsp of no-sugar added Peanut Butter
  • 1 tbsp of Almond Milk
  • 1/3 cup of Dark Chocolate Chunks 
  • 23 tsp of Coconut Oil

Instructions

  1. In a food processor, add the dates, cashews, cocoa powder, salt, peanut butter, and almond milk. 
  2. Mix until well combined and it becomes a thick paste. Some of the cashews will stay chopped and that is perfectly fine. I love the extra crunch!
  3. Get a small bowl with water ready as you prepare the balls. To begin creating these bites, grab a cookie scooper and scoop a ball into the palm of your hand. Wet your other hand with the water in the bowl and begin forming it into a ball. This will create smooth bites. Once they are done, place them in the fridge for 15 to 20 minutes.
  4. Prepare the chocolate drizzle in a double boil (Pot with filled 1/3 way with water, and a glass bowl on top, not touching the water), begin melting the chocolate and coconut oil. Once melted, drizzle on top of the bites as little or as much as you like. Place back in the fridge for 10 minutes until the chocolate hardens. 
  5. Serve and enjoy!
