It’s that time of the year when we all reflect on the year that passed and we look forward to the New Year. We make a list of things we want to accomplish and the things we have accomplished so far. This year, we are celebrating at home, hoping to show the kids the ball drop and enjoy some yummy Chinese food. However, in my book, a new year means new desserts. I love getting creative with my recipes and making my family’s favorite dishes and treats. To kick things off, I am introducing New Year’s Meringue Pops.
This fun and playful treat is perfect for a New Year’s celebration. They take the shape of a classic lollipop, but with some fun twists and surprises. They look a little too good to eat, but that never stops me and my family. We constantly find ourselves going back for more — for seconds, thirds, fourths, okay, you get my drift. Your kids will need a little sugar to stay up late enough to watch the ball drop. Why not have it in the form of a scrumptious meringue pop?
How to Make the Perfect New Year’s Meringue Pops Every Time:
This meringue recipe is super easy. I base it off of my Nutella Meringue recipe. It is a super easy, no-fail recipe that I opt for every time I make meringue. You truly cannot go wrong with this recipe and dish. It will satisfy everyone’s sweet tooth and keep everyone smiling all night. What more could you want in a treat on New Year’s Eve?
Ingredients for Delicious Meringue Pops:
The ingredient list is short and simple for this dish, and you probably have most of these things in your kitchen already. Here is everything you need to make this adorable treat.
- Egg Whites
- Granulated Sugar
- Cornstarch
- Sprinkles of Your Choice
Equipment Needed for Making the Meringue:
- Stand Mixer, or Electric Mixer
- Small Pot
- Piping Bag and Tip of your Choice
Steps for Creating the Superb New Year’s Meringue Pops:
Now, it is time to officially get started! The first thing you will need to do is separate your eggs, and make sure there is absolutely no yolk in the egg whites. If it is easier or quicker, you may also use store-bought egg whites.
Now, fill a small pot up with water halfway and bring it to a boil. Once the water is boiling, lower the heat to simmer. Next, add the egg whites to your stand mixer bowl and add the sugar, as well. You will then place the mixing bowl or a heatproof bowl on top of your pot, but make sure it is not touching the water. Afterwards, mix and stir the eggs and sugar together and let sit. Keep mixing on and off until the sugar has melted, which should take about 7 minutes, give or take.
Once the sugar has melted, begin mixing it on medium for one minute. Then, stop the mixer and add the cornstarch. Mix this on high for 10 minutes until there are stiff peaks. After this, transfer the meringue to the piping bags.
Next, using a baking pan, line it with parchment paper and lay down the lollipop sticks. Just remember to make sure you space them far enough to allow piping of the meringues. After this, you can start to pipe the meringue on top of the lollipop sticks! Lastly, sprinkle your sprinkles on top of your pops and place the lollipops in the oven for 6 hours. Personally, I selected gold sprinkles with different shapes and sizes for these pops to decorate them for a New Year’s Celebration.
I love this treat because just a little addition like sprinkles allows the baker to make the treat their own. I love to express my creativity through decorating my baked goods!

One of the great things about these New Year’s Meringue Pops is that you can make them ahead of time and store them in an airtight container for up to two weeks. If you have time before a holiday gathering, you can whip these up with ease!

Description
These Meringue Pops are the perfect make-ahead dessert for a celebration. Make them extra special for New Year’s with gold sprinkles.
Ingredients
- 10 Egg Whites
- 1 1/2 cups of White Granulated Sugar
- 2 tsp of Cornstarch
- Sprinkles of your Choice
Instructions
- In a small pot, bring water to a boil. Once boiled, lower the heat to low/simmer.
- Separate the egg white from the yolk. Make sure there is no yolk in the egg whites.
- Place the egg whites and sugar in a mixing bowl. Place above the boiling water and mix every few seconds until the sugar has melted. This should take about 7 minutes.
- Bring the mixing bowl to the mixer and mix it on medium for one minute. Add the cornstarch and mix on high for about 10 minutes, until you reach stiff peaks.
- Prepare your baking pans with parchment paper and lay down your lollipop sticks. Make sure you space them far enough to allow piping of the meringues.
- Add the meringue to your piping bag and start piping the meringues on top of the lollipop sticks. Sprinkle with your favorite sprinkles.
- Preheat the oven to 150 and place your meringues in the oven for 6 hours.
- Serve and enjoy!
Notes
Store the pops in an air tight container to keep them fresh for up to two weeks.
