I absolutely love cooking and baking during the summer. The kids are home and there are some delicious fruits in season. This week, I decided to try out Nectarine Turnovers with Icing. Similar to an Apple Turnover, which I love making in the fall, it is even easier to make! I love using sweet, fresh nectarines for the perfect kick of summer taste and smells.

  • Pepperidge Farm Puff Pasty Dough
  • Fresh Nectarines
  • Dark Brown Sugar
  • Powdered sugar
  • Water
  • Lemon
  • Salt

Steps to Make the Nectarine Turnovers:

Now that your kitchen is full, you are ready to hit the ground running. If you keep your dough in the freezer, make sure to fully thaw the dough before using it. Once the dough is at room temperature and moldable, open it up and lay it on a lightly floured surface. Roll out the dough using a rolling pin until the creases of the folds of the dough are blended in and the rectangular shape is a little larger than the original.

Next, you will begin to cut the dough into squares. You should end up with six squares from each slab of dough.

Rolled in Dough Tip: Make sure that the squares are resting on a floured surface so the dough does not stick to your counter. Trust me, if that happens, it is not fun to clean up.

Afterwards, wash, dry, and cut the nectarines into small cubes. I use a salad chopper to quickly create a small, evenly cut squares. I love using this method because the nectarines also release juice, which I can use for a smoothie, the icing, or just drink it. It is so sweet, fruity, and perfect for summer!

Next, you will place the nectarines in a sieve and over a small bowl to collect all the juice. Sprinkle them with freshly squeezed lemon and brown sugar and lightly mix to combine the ingredients.

Then, you are ready to official start making the turnovers! Begin assembling the nectarine turnovers by placing one tablespoon of the nectarine mixer in the middle of the squared dough. Next, dip your finger or a pastry brush in water and go over the edges of the square. You will top this with another squared dough and close the edges by taking a fork and using it to press the top dough edges down. Do that all around the treat and place it on a baking pan with parchment paper.

Once this step is completed, bake the turnovers in the oven on 350 degrees Fahrenheit, until the dough has puffed up and is golden brown. Once ready, take out of the oven and let rest on the pan for five minutes. Then, transfer them to a cooling rack.

Adding Icing to the Nectarine Turnovers:

Once the turnovers are completely cooled, you can begin making your icing. Personally, I love to drizzle the icing on top of the turnover and adding extra nectarines on top of the icing. This gives you a delicious church and taste to your treat and makes the dish feel so fresh!

My go-to icing recipe is the one I introduced in the Lemon Sour Cream Loaf Cake. It is just the right amount of sweetness in each bite and is super easy to spread on the turnovers. Here’s a quick tip. If the icing is too watery, add more powdered sugar. If it is too sticky, add more water to it.

Rolled in Dough – Bake With Kids Edition:

Luckily, there is so much you can let the kids do with this recipe! It is one of the favorites to make with my kids, as they practically make it all by themselves. Of course, always watch what they do, but you will be impressed with how well they can make these! All of these tasks depend on the ages of the children, but this is one dessert they can definitely help with and be proud of. Here are a few things they can do to make this amazing dessert even more special:

  • Roll out the dough.
  • Squeeze fresh lemon on top of the nectarines.
  • Mix the brown sugar and nectarines.
  • Fill half of the dough squares with nectarines.
  • Wet the edges of the dough with a pastry brush.
  • Place the top dough on top of each square.
  • Close the dough squares together with the edge of the fork.
  • Decorate their own turnover with the icing! This will most likely be their favorite part.

Turnover Ingredients:

  • One Package of Pepperidge Farm Puff Pastry Dough
  • 45 Fresh Nectarines
  • 3 tsp of Lemon Juice
  • 1/4 cup of Dark Brown Sugar

Classic Icing Ingredients:

  • 1 cup of Powdered Sugar
  • A Pinch of Salt
  • 12 spoons of Hot Water
  • 1 tsp of Lemon Juice

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. 
  2. Flour your work areas with all-purpose flour and lay the dough on it.  With a rolling pin, roll out the dough until the creases of the folds of the dough are blended in and the rectangular shape is a little larger than the original.
  3. Begin cutting the dough into squares. You should end up with about 6-8 squares from each dough. Make sure that the squares are resting on a floured surface so the dough does not stick to your counter.

  9. In the meantime, begin making the icing. Combine all the icing ingredients: powdered sugar, lemon, salt, and hot water until you reach your desired consistency. If the icing is too watery, add more powdered sugar.  If it is too, sticky add more water.
  10. Once the turnovers are completely cooled, you can start to drizzle the turnovers and spread the icing over the top of the turnover. Top it off with more chopped nectarines. 
  11. Serve and enjoy!
