A Sweet Sandwich Pavlova with Cream and Blueberries

Summer and the Fourth of July means it is officially blueberry season! To celebrate this delicious season, I decided to make this sweet, tasty treat that was all gone immediately. Sandwich Pavlova with Cream and Blueberries is the perfect bite of crispy, gooey, creamy goodness, with a pop of fresh fruit in all in one bite.

So, what exactly is Pavlova? Named for Russian Ballerina Anna Pavlova, it is a meringue-based dessert with a crisp crust and soft light inside filled with fruit and whipped cream. It is one of my favorites — sweet and delish!

I really enjoy making Pavlova for my party guests. I love anything you can bake ahead of time and just add a few fresh ingredients. Unlike traditional meringues, Pavlovas do not need to be in the oven as long. It also does not take all day to make, so you still have time to make one today if you are looking for a last-minute dessert. This time around, I opted to make my Pavlova in little sandwich shapes to make an adorable little treat.

Sandwich Pavlova with Cream and Blueberries Ingredients:

Here is everything you need to stock in your kitchen to make the scrumptious Sandwich Pavlova with Cream and Blueberries.

  • Egg Whites
  • White Sugar
  • Cornstarch
  • Heavy Cream
  • Powdered Sugar
  • Vanilla Extract
  • And, of course, Blueberries!

How to Make a Perfect Pavlova:

To get the ball rolling with your Sandwich Pavlova with Cream and Blueberries, first create a double boiler (one pot filled up to one-third of the height of the water. Just make sure the pot is small enough where the mixing bowl can sit on top but not touch the water). Once your water is boiling, lower the heat to low-medium.

Before you begin actually making your Pavlova, make sure to whip down the mixing bowl with vinegar to get rid of any fats and oils that may still exist on the bowl. Once you have done this, add the egg whites and sugar to the bowl. Place this on top of the boiling water. At this point, it is important to lower the heat to low-medium.

After this, you will mix the eggs and sugar with a whisk every couple of minutes until all the sugar grains have been melted. This should take about 5 or 6 minutes, but it might take longer depending on the temperature.

Once the sugar has melted, begin mixing the combination on medium-high for two minutes. After these two minutes, stop the mixer and add the cornstarch. Begin mixing this on high for about 10 minutes. You will know it is ready when the meringue does not move when you move the mixing bowl around.

Now, transfer the meringues into a piping bag fitted with your choice of a tip. Personally, I opted for a round tip to create the perfect drops of meringue. Afterwards, begin making circles with the pipped meringues. Pipe them next to each other to create a large circle or square. You will then pipe more meringue and spread it in the middle of the circle or square to create a base for the meringue layer. Here, make sure it is lower and flatter than the meringues surrounding it. This will ensure you have room for the cream and fruits.

For the top part on the treat, simply pipe meringue next to each other in the same size as the base layer. Bake on 225 degrees Fahrenheit for one hour and fifteen minutes. Now, part of your dish is set!

Additionally, you can store the Pavlova meringues bases and top layers in an airtight container for up to 3 days. Now that you made the first part of Sandwich Pavlova with Cream and Blueberries, you are ready to take on making the cream.

How to Make the Captivating Cream:

Pavlova cream is so easy to make. If you got the Pavlova part done, these steps will be a breeze. Also, I love that with the additional fruit extracts, you can really elevate your taste and make the treat your own flavor. For a traditional Pavlova, I decided on a vanilla-flavored treat, but feel free to get creative and have some fun! That is what baking and discovering new recipes is all about.

To get started with making the cream, mix the heavy cream with vanilla extract and powdered sugar on high until you reach stiff peaks. Just a note, make sure to not over mix and break the whipped cream. Afterwards, place two full table spoons on the bases of the meringues and top with blueberries. Lastly, add on the top meringue layer for a beautiful white Sandwich Pavlova with Cream and Blueberries.

Description

The Sandwich Pavlova with Cream and Blueberries recipe is made perfect for a personal size for any get-together or summer BBQ with family and friends. 


Ingredients

  • 5 Egg Whites
  • 3/4 cup of White Sugar
  • 1 tsp of Cornstarch
  • 2 cups of Heavy Cream
  • 1 cup of Powdered Sugar
  • 1 tsp of Vanilla Extract
  • Blueberries!

Instructions

Part 1: Pavlova

  1. Preheat  the oven to 225 degrees Fahrenheit.
  2. In a small pot, bring water to a boil. Once boiled, lower the heat to low. 
  3. Place the egg whites and sugar in a mixing bowl. Place above the boiling water and mix every few seconds until the sugar has melted. You should do this for about four minutes. 
  4. Bring the mixing bowl to the mixer and mix it on medium for one minute. 
  5. Add the cornstarch and mix on high for about 10 minutes, until you reach stiff peaks. 
  6. Add the meringue to your piping bag and start piping the meringues onto a pan topped with parchment paper. Pipe the meringues next to each other or in layers to create the base of your pavlova sandwich. For the top pipe, place the meringues close to each other to create a beautiful top. 
  7. Place in the oven for one hour and 15 minutes. Let it cool and place it in an airtight container if you do not plan to serve immediately. 

Part 2: Cream

  1. To make the cream, add the heavy cream, powdered sugar, and vanilla extract to the mixing bowl and mix on high until you reach stiff peaks. 
  2. Begin assembling the pavlova sandwiches by topping the bottom meringues with cream and then blueberries.
  3. Lastly, top the pavlova with the top meringues. 
  4. Serve and enjoy!
    1. Store in the fridge if you are not serving immediately. 

Notes

Store this dish in the fridge if you are not going to serve them immediately after making them.
