Easy Linzer Cookies with maple syrup

Description

The perfect Easy Linzer Cookies with maple syrup with strawberry preserve that soft and tasty. Bake them with the kids or for someone special. 


Ingredients

Scale
  • 1/2 cup white granulated sugar
  • 2 tbsp maple syrup
  • 1/2 tsp baking soda
  • 5 tbsp butter or margarine for dairy free cookies
  • 1 large egg
  • 1 egg yolk
  • 2 1/4 cups flour
  • strawberry preserves (or any flavor you prefer)

Instructions

  1. Melt the butter or margarine in a saucepan and set aside. 
  2. In a stand mixer with the dough hook add the maple syrup and sugar and mix on medium until well combined. 
  3. Add the baking soda and mix until well combined.
  4. Add the egg and egg yolk and mix until well combined. 
  5. Add the melted butter/margarine and mix until well combined. 
  6. Lastly add the flour and mix until a ball of dough forms. Transfer the dough onto plastic wrap, wrap the dough and store in the fridge for 15 minutes. 
  7. Pre-heat the oven to 350 degrees. Line two baking sheets with parchment paper. 
  8. For easy transfer take one of the parchment paper and lay it on the counter. Sprinkle flour onto the parchment paper, place the dough in the middle top with sprinkle of flour and another layer of parchment paper. Roll out the dough to 1/4 of inch thickness. Cut out with cookie cutters, don’t forget to make a hole in half of the cookie as they will become the top part. Gather access dough and form into a ball. Transfer parchment paper onto the baking sheet and bake for 10 minutes or until the cookies start browning at the bottom. Let cool before transferring onto a cooling rack. Repeat until no more dough is left. 
  9. Once the cookies are fully cooled, begin assembling them. Take the bottom cookies and spread the strawberry preserve (about 1 tsp), place the top of the cookie onto and place on the cooling rack. Repeat until done.
  10. Dust all the cookie with powdered sugar and enjoy.
