The Perfect Pecan Chocolate Chip Loaf Cake

Do you pronounce it as p-can or pi-cahn? No matter which way you say it, this Pecan Chocolate Chip Loaf Cake will give you sweetness and happiness with a little church all in one bite.

Every Friday calls for making that perfect cake to serve with your Saturday morning coffee (and let’s be honest, your afternoon coffee, too). An amazing weekend is incomplete without the perfect slice of cake to sweeten your day. This week, my Pecan Chocolate Chip Loaf Cake was inspired by my husband. He gave me two ingredients and requested them to be in a cake: pecans and milk chocolate chips. So, here you have it. Inspired by my Nordic ware collection, I decided to switch it up and create a loaf cake.

This treat is perfect weekend activity, since the entire baking process takes less than one hour. Although, I admit: if you are a mom like me, having your kids help out may make the steps take longer. However, this is the perfect way to keep your kids occupied during a quarantine weekend and they will absolutely love the cake to boot.

The Pecan Chocolate Chip Loaf Cake is a moist, sweet cake. Between the amazing texture and the chocolate chips, this dish will basically melt in your mouth. One reason I love making this dish is much is because of the addition of the pecans. They provide the perfect amount of church, texture and flavor to enhance this delightful dessert.

Ingredients for the Perfect Pecan Chocolate Chip Loaf Cake:

Here is everything you need to bake a divine Pecan Chocolate Chip Loaf (although, I can’t promise you won’t start snacking on the pecans and chocolate chips before you start baking).

  • All Purpose Flour
  • White Granulated Sugar
  • Baking Powder
  • Salt
  • Milk (Dairy-Free Option: Switch the Milk for Orange Juice)
  • Oil
  • Eggs
  • Pecans
  • Chocolate Chips
  • Vanilla Extract

Recipe Tips, Tricks and Hacks:

You can make this cake parve/dairy-free by substituting the milk for orange juice. It will not affect the flavor, but definitely will make the cake a little fluffier. Regardless of your choice, one bite of the Pecan Chocolate Chip Loaf Cake will be a dream! It is perfect for the whole family to enjoy.

If you do opt for the dairy-free version and use orange juice, you can amp up your flavor even more. If you love oranges, add orange extract to further elevate the taste and flavor! Personally, I take it another step further. I love adding vanilla extract for a delicate vanilla taste that balances the orange juice.

Similarly to the milk alteration, you can switch and swap almost all the ingredient in this cake to adjust the flavor. For example, the pecans can be switched for walnuts, and the chocolate chips have endless possibilities for change-ups. You can use chocolate chunks, white chocolate, dark chocolate or carob chips — just to name a few options. At our home, we love milk chocolate, so I usually stay loyal to using those when I am baking and eating.

When actually baking this cake, make sure to not open the oven while the cake is baking until the top becomes brown. Until you think the cake is ready, do not open the oven or touch the cake. To make sure the cake is ready, insert a toothpick. If it comes out clean, or with fluffy cake crumbs, the cake is ready.

Once you take the cake out of the oven, let it cool for about five minutes in the pan and put it on a cooling rack before placing it on a serving platter. This limits the moisture that can build at the bottom of the cake, preventing it from becoming soggy. Once you finish all these steps, it is time to devour your finished masterpiece!

Description

This Pecan Chocolate Chip Loaf is the perfect cake for any occasion. For ultimate relaxation, pair with a cup of coffee and a relaxed weekend afternoon. This cake is soft and packed full of delicious flavor. 


Ingredients

Scale
  • 1 3/4 cup of All-purpose Flour 
  • 1 1/4 cup of White Granulated Sugar
  • 1 tsp of Baking Soda
  • 1/2 tsp of Salt
  • 3/4 cup of Milk or Orange Juice
  • 3/4 cup of Oil
  • 1 tsp of Vanilla Extract
  • 2 Eggs
  • 3/4 cup Milk Chocolate Chips or Dark Chocolate Chips
  • 1/2 cup of Chopped Pecans

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Mix all dry ingredients in a mixer bowel on low: flour, sugar, salt and baking powder. Do this until they are well combined. 
  3. Make a well and add the orange juice, eggs, oil, and vanilla extract. Mix until well combined on medium speed. 
  4. Add the chocolate chip and pecans and mix for 10 seconds (or until well combined). 
  5. Coat your cake pan with baking spray and pour the batter in. It should reach 3/4 of the height of the pan. 
  6. Bake for 40-50 minutes, or until brown on the top and the toothpick comes out clean. 
  7. Let the loaf cool in the pan for five minutes.
  8. Move to cooling rack and let cool.
  9. Serve and enjoy!
