Description
These Chocolate Covered Vanilla Cake Pops are the perfect Passover treat! They are super easy to make with your kids and it is so nice to let them get creative with the decorations.
Ingredients
Scale
Cake Mix:
- 4 Eggs
- 1 1/2 cups of Sugar
- 1 cup of Oil
- 3/4 cup of Almond Flour
- 1 cup of Potato Starch
- 1 tsp of Salt
- 1 tsp of Baking Powder
- 1 tsp of Vanilla Extract
Chocolate Dip:
- 2 bars of Almond Chocolate
- 2 tsp of Coconut Oil
Instructions
- In a large mixing bowl, add all your cake ingredients (eggs, sugar, oil, almond flour, potato starch, salt, baking powder, and vanilla extract) and mix them well.
- Add the cake batter to the molds. Put 1 tbsp in per mold (fill to the top).
- Once ready, let them cool. Avoiding touching them so they keep their shape.
- In the meantime, in a pot, bring water to a boil and lower to simmer. Place a glass bowl on top (make sure it doesn’t touch the water), and place the chocolate in the bowl. Let the chocolate melt and mix it from time to time. Pour the melted chocolate into a narrow cup (one that can handle the heat).
- Dip your lollipop stick in the chocolate and stick in the middle of the cake pop.
- Place the cake pops in the fridge to cool for half an hour to an hour. (Or, until the chocolate hardens).
- If necessary, warm up the chocolate a little before starting to dip the cake pops. If the chocolate is too hot, let cool before you begin to dip the cake pops in the chocolate. After all cake pops have been covered with chocolate, place them in the fridge for one hour, or until the chocolate has hardened.
- Serve and enjoy!
Notes
If you wish to add sprinkles or coconut shavings, or any other toppings, do so after you dip the cake pops in the chocolate. Let the kids create their own by creating a station of dipping choices. Have fun!
