I cherish the Fridays I get to be home and not shooting a wedding (don’t get me wrong, I love shooting these beautiful weddings!). What I especially love is those Friday mornings where we rush to finish the laundry, cleaning, errands, and a few home projects.
In between all these tasks I get to enjoy a little cooking and baking. Music playing in the background and the chopping, mixing, and tasting begins. This Friday we were invited for Shabbat dinner. One of my go to cakes is the Orange Poppyseed cake by Kosher by Gloria with a few changes. The best part, you can make its non-dairy!
Oh and did I mention it takes 10 minutes to make and about 70 minutes to bake? Home easy is that. I have the cake in the oven while I start cooking.
If I don’t have orange juice I use water and add more of the orange extract for flavor and smell. This recipe makes one small cake (8 inches) and regular baking pan (10 inches). You may make a large cake. However, I love making two. If we are invited I keep the small one at home for our morning coffee. If we have people over I send them home with the small cake. No one ever turns that down!

Description
A moist cake that has that perfect crisp like a muffic top. The orange poppyseed cake takes less than 10 minutes to put together.
Ingredients
- 3 1/2 cups flour
- 2 1/2 cups sugar
- 1 1/4 teaspoons baking powder
- 1 teaspoon salt
- 1 2/3 cups orange juice or milk if you wanted to make it dairy
- 1 2/3 cups oil
- 3 large eggs
- Poppy seeds to taste (I place about 1/3 of a cup)
- 1 teaspoon orange extract
Instructions
- Preheat the over to 350 F.
- Mix together all the dry ingredients in the bowl of your mixer. Flour, sugar, salt, and baking powder.
- In the bowl of an electric mixer, make a well in the center and add all the wet ingredients. Orange joice, oil, and eggs. Mix everything together on medium speed until well combined.
- Once well combined add the poppy seeds to taste.
- Coat your cake pan with baking spray. For those pans with designs make sure you baking spray is with flour.
- Bake for 70 minutes or until tester inserted comes out clean.
