Description
These No-Bake Peanut Butter Date Balls are the perfect quick healthy bite that will satisfy your sweet tooth. They are vegan, dairy free and you don’t even need to turn on the oven. Talk about a win-win!
Ingredients

- 2 cups of Pitted Dates
- 1/2 cup of Unsalted Cashews
- 2 tbsp of Cocoa Powder
- 1/2 tsp of Salt
- 2 tbsp of no-sugar added Peanut Butter
- 1 tbsp of Almond Milk
- 1/3 cup of Dark Chocolate Chunks
- 2–3 tsp of Coconut Oil
Instructions
- In a food processor, add the dates, cashews, cocoa powder, salt, peanut butter, and almond milk.
- Mix until well combined and it becomes a thick paste. Some of the cashews will stay chopped and that is perfectly fine. I love the extra crunch!
- Get a small bowl with water ready as you prepare the balls. To begin creating these bites, grab a cookie scooper and scoop a ball into the palm of your hand. Wet your other hand with the water in the bowl and begin forming it into a ball. This will create smooth bites. Once they are done, place them in the fridge for 15 to 20 minutes.
- Prepare the chocolate drizzle in a double boil (Pot with filled 1/3 way with water, and a glass bowl on top, not touching the water), begin melting the chocolate and coconut oil. Once melted, drizzle on top of the bites as little or as much as you like. Place back in the fridge for 10 minutes until the chocolate hardens.
