Every year around Passover time, I start to get this feeling that we better eat all that we like because soon it will be Passover and we won’t have anything to eat. Yet, when I begin listing all the groceries we will need those delicious holiday dinner come back to mind and the creativity for pairing a tasty dessert begins. So this year it was all about home made cakes.
I mean, am I the only one who really dislikes store bought cookies and cakes for Passover? They are either too dry, too matzah tasting, or just simply no good. No matter what, I still think that a cake should still have the texture and taste of a cake.

Instructions for Passover Chocolate Brownie cake:
First, let’s melt that chocolate. In a double boiler, melt the chocolate and butter together.
Next, mix the melted butter and chocolate with the eggs, until well combined. Next, add the sugar and mix with a whisk until well combined. Pour onto a 9 or 8 inch cooking pan. I love my spring pans for passover cakes.
Bake, let cool, and serve. It’s just that easy. No fuss whisking the eggs until your hand falls off or a lot of steps to get this delicious, melt in your mouth gluten brownie cake.

Ingredients
- 5 ounces semi-sweet chocolate
- 1 stick (1/2 cup) plus 1 tbsp unsalted butter
- 1 cup white sugar
- 4 eggs
- 3/4 cup cocoa powder
Instructions
- Preheat the oven to 375 F
- Oil a spring pan either a 9inch or 8 inch. You can use a regular cake pan as well.
- Over a double boiler, melt the chocolate and butter together.
- Add the melted chocolate and butter mixture onto a bowl with your eggs. Whisk until well combined.
- Add the sugar and cocoa powder and mix until well combined.
- Pour the batter onto your cake pan, and bake for 25 minutes, or until the top crackle has formed.
- Let cool in pan before cutting or opening the spring pan. Serve and enjoy.
