Ingredients
Scale
For the Cake:
- 1/2 cup of Butter (softened to room temperature)
- 1 cup of Sugar
- 3 Large Eggs
- 1 1/2 cup of Flour
- 1/2 tsp of Baking Powder
- 1/4 tsp of Baking Soda
- 1/4 tsp of Salt
- 2 tablespoons of Fresh Lemon Juice
- Zest of One Lemon
- 1/3 cup of Sour Cream
For the Icing:
- 2 cups of Powdered Sugar
- A Pinch of Salt
- 3–4 spoons of Hot Water
- 1 tsp of Lemon Extract or Lemon Juice
And, of course, Strawberries.
Instructions
- Preheat oven to 350 Fahrenheit degrees.
- Prepare a 9×5 loaf pan with parchment paper or spray it with baking spray.
- In a mixer bowl, cream the butter for 1 minute and add the sugar until fluffy.
- Add one egg at a time until the mixture is well-combined.
- Add the flour, baking powder, baking soda, and salt. Start mixing on low. While the mixer is on, add the lemon juice, lemon zest, and the sour cream. The batter should be a little thick at this point.
- Pour the batter into the pan and bake for 60 minutes. If the cake is brown on top, insert a toothpick to see if the cake is ready. It should come out clean.
While the cake is cooling, you can prepare your icing:
- Mix all your ingredients together, add more water or powdered sugar as needed. Set aside.
- Once the cake is fully cooled down, spread the icing on top. Wait for the icing to harden before adding fruits.
- Add your strawberries (or toppings of your choosing).
- Serve and enjoy!
Notes
- For the best results, add the fruit right before serving the cake.
