A leftover banana bread? You must be wondering what in the world that is. It’s a moist and tasty cake that will have you coming back for just one more slice every time.
Start by collecting all your leftover sweets and nuts. For this receive I used:
- Bananas
- Pecans
- White chocolate chips
- Semi-sweet chocolate chips
Can you go wrong with any of these?! Absolutely not. You can also substitute pecans for walnuts. Any of the chocolate chips can be switched to bitter, or peanut butter chunks or anything else you may have laying around.
Ingredients for Leftover Banana Bread:
- all purpose flour
- salt
- baking soda
- sugar
- butter
- eggs
- milk
- vanilla extract
- bananas
- pecans
- white chocolate chips
- semi-sweet chocolate chips
Instructions:
The list of ingredients may be long but this cake only takes 5 minutes to make and is ready to go in the oven. So first thing first, warm that oven to 350 degrees F.
Line a 9×5 baking pan with parchment. To make the parchment stick and not raise back up, simply spray baking spray on the bottom and side. I use a rectangular cut parchment paper for the long side, and a narrow one for the narrow side. This also makes it easy to pull out the bread once cooled.
Next, cream the butter and the sugar using your mixer. This should take about 4 to 5 minutes. The butter should be soft to the touch prior to mixing it with the sugar. Let it stand out in room temperature for 20 minutes (depending on the season this may take longer if the house is cold).
Add the milk and vanilla extract and mix until well combined. Next, add one egg at time, making sure the egg is well incorporated prior to adding the second egg.
Next, add your banana, make sure to mash them a little before adding.
Add the dry ingredients while the mixer is on, on low.
Fold in the pecans, white chocolate chips, and the semi-sweet chocolate chips.
Transfer the batter onto the baking pan. Bake for 5 minutes and top the batter in the oven with sliced banana (long wise). This will make sure the banana doesn’t sink into the batter as the cake bakes.
Bake for 60 minutes or until you insert a tooth pick and it comes out clean.

- Pre heat the oven to 350 degrees F.

- Add the dry ingredients (flour, salt, baking soda) to a separate bow, mix to combine and set aside.
- Cream the butter and the sugar for 4 -5 minutes in the mixer.
- Add the milk and vanilla extract, mix until well combined.
- Add the eggs, one at a time. Make sure well combined before adding the second egg.
- Add the dry ingredients to a separate bow, mix to combine and set aside.
- On low, add the dry ingredients and mix until well combined.
- Fold in the pecans and chocolate chips.
- Transfer the batter onto the baking pan
- Bake for 60 minutes or until tooth pick comes out clean.
