Easy and simple eggplant and cheese bourekas filling for any pastry dough. Perfect for an Israeli-style breakfast or on-the-go snack.

- 1 Package of Frozen Pastry Dough
- 1 Large Eggplant
- 1/2 cup of Feta Cheese
- 3/4 cup of Grated Mozzarella
- Salt
- Pepper
- 1 Egg White
- Sesame Seeds, Poppy Seeds or Seasonings of Your Choice
Instructions
- Grill the eggplant until well done. Once ready, remove the skin and add the inside of eggplant to a medium-size bowl.
- Preheat the oven to 350 degrees Fahrenheit.
- Add the feta and mozzarella to the bowl and mix until well combined.
- Add salt and pepper to taste.
- Roll out the room temperature dough and cut circles. Begin filling each circle with one tablespoon of the filling. With a brush or your finger wet one half of the circle edge. Fold over and close tight with the end of the fork to create a design and ensure the filling stays inside.
- Lastly, brush over the bourekas with eggwhite and top it with sesame or poppy seeds.
- Bake in the oven until golden brown.
