Description

Easy and simple eggplant and cheese bourekas filling for any pastry dough. Perfect for an Israeli-style breakfast or on-the-go snack. 


Ingredients

Scale
  • 1 Package of Frozen Pastry Dough
  • 1 Large Eggplant
  • 1/2 cup of Feta Cheese
  • 3/4 cup of Grated Mozzarella 
  • Salt
  • Pepper
  • 1 Egg White
  • Sesame Seeds, Poppy Seeds or Seasonings of Your Choice

Instructions

  1. Grill the eggplant until well done. Once ready, remove the skin and add the inside of eggplant to a medium-size bowl. 
  2. Preheat the oven to 350 degrees Fahrenheit. 
  3. Add the feta and mozzarella to the bowl and mix until well combined. 
  4. Add salt and pepper to taste. 
  5. Roll out the room temperature dough and cut circles. Begin filling each circle with one tablespoon of the filling. With a brush or your finger wet one half of the circle edge. Fold over and close tight with the end of the fork to create a design and ensure the filling stays inside.
  6. Lastly, brush over the bourekas with eggwhite and top it with sesame or poppy seeds.
  7. Bake in the oven until golden brown. 
  8. Serve and enjoy!
