This simple coffee crumb cake won’t require a fancy mixer, just two bowls and a whisk, and I bet you have all the ingredients you need at home.

  • Butter/margarine
  • Vanilla extract

Ready to make this easy coffee crumb cake with a sugary swirl? Here are some tools you will need:

Directions for an easy Coffee Cake:

Pre-heat the oven to 350 degrees F.

In one of the mixing bowls add all the dry ingredients, except the brown sugar: flour, sugar, baking soda, baking powder, and salt.

In the second bowl mix the wet ingredients: eggs, oil, orange juice, vanilla extract.

Slowly add the dry ingredients to the wet ingredients bowl, mix as you add.

Spray your cake pan with a baking spray and pour half the batter into the pan. Take the dry ingredients bowl and add one cup flour, one cup brown sugar, mix together and sprinkle (half a cup) on top of the batter that is in the cake pan. Cover with the rest of the batter.

Add the melted butter and cinnamon to the rest of the brown sugar and flour mix. With a spoon mix, until you have crumbs. Layer the crumbs on top of the cake to cover the batter.

Bake for 60 minutes or until a tooth pick comes out clean.

Ingredients

For the cake: 

  • 1 3/4 cup all-purpose flour
  • 1 1/4 cup white sugar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp of salt
  • 3/4 cup orange juice (or water)
  • 3/4 cup oil
  • 1 tsp vanilla extract
  • 2 eggs

For the swirl and crumbs:

  • 1 cup flour
  • 1 cup brown sugar
  • 1 tsp cinnamon 
  • 1/2 cup melted margarine 

Instructions

  1. Pre-heat the over to 350 degrees
  2. Spray your baking pan with baking spray
  3. Add all the dry ingredients to a bowl and mix with a whisk until well combined.  Except for one cup of flour, brown sugar, and cinnamon. 
  4. Add all the wet ingredients to a bowl and mix until well combined. Do not add the melted margarine. 
  5. Add the dry ingredients to the wet ingredients bowl, mix until well combined. 
  6. In the other dry bowl add the flour and brown sugar and mix. 
  7. Pour half the batter onto the baking pan, sprinkle half the flour and sugar mixture on top of the batter. 
  8. Pour the rest of the batter on top of the sprinkled sugar mixture. 
  9. Add cinnamon and the melted butter to the rest of the sugar mixture and mix to get crumbs. Sprinkle the crumbs on top of the cake batter. 
  10. Bake for 60 minutes or until a toothpick comes out clean.
